You need potatoes with a low starch content. There is an easy method for recognizing them - if a sticky, whitish liquid remains on the knife after cutting the potatoes, you have come across a potato with a lot of starch.

Cut the potatoes into thin strips (the size of a pinky finger) and wash them thoroughly. If they have more starch, you can leave them in cold water for a few hours.

Immediately before frying them, the sliced ​​potatoes are dried well with a cotton cloth and placed in a pot or pan with moderately heated oil.

Fry them until they are semi-cooked and before they change their color, the french fries are removed and placed onto kitchen paper. After straining them from the fat, place them back into the pan, which this time, however, the oil is heated to a higher degree.

Fry them until they aquire a golden color.
