Ingredients

  • flour - 1 4/5 cups (450 g)
  • milk - 1 cup (240) ml warm
  • butter - 1/3 cup (80 g) melted
  • brown sugar - 1/3 cup (80 g)
  • yeast - 1 1/3 tbsp (20 g)
  • salt - 1 tsp
  • eggs - 2
  • Dough spices
  • brown sugar - 2 tbsp (30 g)
  • cinnamon - 3 tbsp
  • ginger - 1 tbsp
  • nutmeg - 1 tbsp
  • Glaze
  • powder sugar - 1/2 cup (130 g)
  • milk - 2 tbsp (30 ml)
  • vanilla - 1 tsp (5 ml)

How to make

Combine the yeast and 2 tsp (10 g) brown sugar to a runny consistency. Mix with 1/3 of the milk and leave aside.

Mix all the products for the dough (excluding the spices) and the activated yeast. Add a little more flour if needed until the dough firms up. Leave it aside for 45 min.

Mix all the spices for the dough.

Roll out the dough. Fold both ends toward the middle, then the other 2 ends inward as well (check video if you're feeling confused).

Flip the dough over and roll it out again. This folding and rolling out process needs to be done a total of 3 times.

Heat oven to 360°F (180 °C).

Divide up the dough into equal parts using a dough knife. Shape the parts into balls and roll them out flat. Sprinkle with the spices for the dough and wrap up into rolls.

Transfer rolls to a cake form and put to bake for 30-35 min. In the meantime, mix the products for the glaze. Once the cake is baked, pour the glaze on it generously.
