How to make
Cut the cleaned eggplant into slices. Them add plenty of salt and leave for 20-30 minutes on a slope to drain the bitterness. Wash and dry. Arrange in a baking dish, salt again and sprinkle with pepper.
Mix olive oil with soy sauce and pour over the eggplants. Let them get marinated for 30 minutes, then bake them in a pan in the oven or grill them.
Mix the mayonnaise with a spoon of lemon juice and garlic. Mix the sauce with finely crushed parsley.
Each plate gets several baked eggplant slices, spread with plenty of mayonnaise and tomato rings.
Optionally, you can serve the roasted eggplant with mayonnaise and garlic with a sprig of parsley.
