Ingredients

  • pork ribs - 3.5 lb (1.5 kg)
  • sauerkraut - 1 large head or 2 small
  • black pepper - 1 tsp
  • cumin - 1 tsp
  • dill - 2 tablespoons, seeds
  • water - 1 cup (250 ml)
  • paprika - 1 tablespoon
  • oil - 2/5 cup (100 ml)

How to make

Wash the sauerkraut if it's too salty and chop it coarsely. Pour it into a pressure cooker with the oil, 1 tbsp dill seeds and the water. Cap and boil about 40 min. after the whistle goes off.

In the meantime, separate the ribs, sprinkle with a little salt and black pepper and arrange in a lightly greased tray. Bake at 390°F (200 °C) in the oven for about 30 min.

Next, transfer the sauerkraut to the tray with the ribs, add the paprika, the other 1 tbsp dill seeds, stir everything. Cover the ribs with sauerkraut so they don't burn, then bake in a lowered 360°F (180 °C) oven for 20 min.

Serve hot with a glass of red wine!
