"Once fresh nettle hits the markets I always make Grandma`s Nettle Porridge - both to keep the tradition going and because it`s tasty."

Ingredients

  • nettle - freshly picked, tender
  • onions - 1 large head, ripe (or 3 - 4 stalks of green onions)
  • eggs - 6 - 8
  • feta cheese - 9 oz (250 g)
  • oil - 5 tablespoons
  • paprika - 1 tablespoon
  • salt - to taste
  • black pepper
  • lovage - fresh or frozen
  • spearmint
  • flour - 2 - 3 tbsp

How to make

Wash the nettle with cold water. Pick out delicate leaves and tips. Cut them up finely with scissors.

In a pot of water, add the cut nettle and boil 10-15 min., then pour into a strainer and wash under running water.

Pour water into the pot again and pour in the now-washed nettle. Add the finely chopped onions, oil, salt and paprika.

Boil about 30 min., then you can blend with an immersion blender if you like. Add the eggs 1 by 1, wait for them to boil a bit and stir to make them stringy.

Beat the flour in a bowl with a little water and pour this into the boiling nettle to thicken it.

Finally add the spices: black pepper, lovage, spearmint and crumbled feta cheese too.
