How to make
Put the flour in a dry pan and toast it for a while, by stirring at all times. Once it turns slightly brown, remove it from the heat and allow it to cool.
Clean and wash the nettles well.
Blanch them briefly in boiling water, until they change their color. Strain the water and cut them into small pieces.
Heat the oil and stew the spring onions in it. Once the onions soften, add the nettles. Stir briefly and add the flour and paprika.
Pour about a liter of water in a stream, by stirring constantly to dissolve the flour. Add as much salt and black pepper as you want and chopped fresh lovage.
Cook the porridge on a low heat for about 15-20 minutes, by stirring occasionally.
Serve the nettle porridge with toasted flour sprinkled with ground walnuts.
