"An old-school recipe that`ll always be a favorite."

Ingredients

  • flour - 3 cups (700 g)
  • yeast - 1 cube
  • milk - 1 2/3 cups (400 ml)
  • eggs - 2
  • salt - 1 tsp
  • sugar - 3 tablespoons
  • oil - 2 tablespoons
  • feta cheese - 5.5 oz (150 g)
  • for topping
  • butter - 1/5 cup (60 g)
  • eggs - 1 yolk
  • milk - 2/5 cup (100 ml)

How to make

Dissolve the yeast in about 2/5 cup (100 ml) cool milk.

Sift the flour, make a well in the middle of it. Add in it the salt, sugar, eggs, oil and yeast dissolved in the milk.

Knead a dough, while pouring in the rest of the milk a bit at a time. Knead to obtain a nice, soft dough, then leave it for about 1 hour to rise.

Generously butter the sides and bottom of the tray in which you'll be baking the buns.

Once the dough rises, grease your hands with melted butter, tear bits of it and form equal-sized balls.

Arrange them in the tray and leave for about 40 min. to rise again.

Then cut the feta cheese into small pieces - as many as there are dough balls.

Once risen, make a hole in each with your finger and place a piece of feta.

To make the topping, beat the egg yolk, add the melted butter and cool milk to it.

Beat the mixture well and pour a thin trickle of it over each ball.

Put the buns in a preheated 390°F (200 °C) oven and bake until they gain a nice crisp, then cover them with aluminum foil.

Bake for a total of 50 min., check readiness with a toothpick.

Take them out and cover with a towel, leave to sit briefly.

I guarantee you won't be able to keep your hands from them very long because the aromatic smell wafting from them is irresistible!
