How to make
In a large bowl, crack the whole eggs and add one egg white and set aside the yolk to spread on the tutmanik before baking it. Add flour, yoghurt and baking soda or baking powder to the eggs.
Mix well and put in the resulting mixture the dough.
Knead vigorously with your hands until the dough becomes very sticky. We need to get a thick paste from the dough, which is difficult to pour by scooping it with a spoon or spatula. If the dough does not turn out like a paste, you can dilute it with a little more slightly warmed water.
Wrap the resulting sticky dough, as it is in the bowl, with plastic wrap to freshly store it and leave it for one hour at room temperature.
Prepare a baking tray. Put oil-greased baking paper inside of the baking pan and pour the dough into the pan with a spatula. Sprinkle it with coarsely shredded cheese and spread it with egg yolk diluted with oil (2 tablespoons) and water (1-2 tablespoons).
Add pieces of butter all over the tutmanik.
Bake the tutmanik in a preheated oven to 360°F (180 degrees), until it is fully baked and it has formed an appetizing crust.
When taking out the tutmanik for novice cooks out of the oven, spray with water and wrap with a towel.
