How to make
Knead a smooth and soft dough from the sifted flour, the yogurt with the soda and the other tutmanik products.
Spread the dough in a greased baking pan, evenly and everywhere.
Using a plastic scraper, cut the dough into rhombuses or squares.
Spread the dough with the yolk, which has been beaten in a little water. Place the baking pan in a preheated oven at 390°F (200°C).
Bake the tutmanik for about 40 minutes. Serve it with ayran.
The Shepherd's Tutmanik is ready.
