"Our lunch proposal for today is Quiche with Spinach. So roll up your sleeves and get to it."

Ingredients

  • spinach - 10.5 oz (300 g) frozen and drained
  • eggs - 3
  • milk - 1 cup
  • feta cheese - 1 cup, crumbled
  • flour - 2 tablespoons
  • salt
  • black pepper
  • nutmeg - 1 tsp
  • for the dough
  • flour - 1 1/2 cups
  • butter - 1/2 cup
  • cheese - 1/2 cup grated, can use parmesan
  • eggs - 2 yolks
  • water - 1 - 2 tablespoons, cold

How to make

Knead the flour, butter, egg yolks and cheese into dough. If necessary, add some water to get a smooth dough. Wrap it in foil and put it in the refrigerator for 30 minutes. Preheat the oven to 390°F (200 °C).

Spread the dough out on a floured countertop and knead it. Set a part of it aside for the upper layer. Place the lower (larger one) in a baking dish, to cover the walls. Put it to bake for 5 minutes, remove it, pierce it with a fork all over and return it to the oven for another 5.

Combine the spinach and the other products, and pour it over the layer. Put it to bake for about half an hour. Remove and cover with the pre-rolled out dough for the top layer.

Put the quiche to bake for another 5-10 minutes. Serve cooled.
