Ingredients

  • beef tongue - 2.2 lb (1 kg) English
  • vinegar - 3 1/3 tbsp (50 ml) to 2/5 cup (100 ml)
  • salt
  • black pepper
  • paprika - 1 tsp
  • onions - 2 tablespoons juice
  • bay leaves - 1 crushed
  • sugar - 1 tsp
  • tomato paste - 2 tbsp
  • fennel - a few chopped sprigs

How to make

Wash the beef tongue and boil it in salted water completely. Drain it, peel it and cut into slices with a thickness of 0.3″ (8 mm). Soak it in vinegar, salt and pepper.

Mix together paprika, the strained onion juice, crushed bay leaf, sugar, tomato paste and a little salt and pepper.

Thread several pieces of tongue and skewer, then brush them with a nice spread on all sides. Put in a hot grill to toast on both sides. Serve sprinkled with chopped dill.
