How to make
Beat the eggs + 1 cup sugar with a mixer, then add the vanilla and oil. Mix the flour and baking powder well, then add them to the resulting mixture.
In a tray, caramelize the rest of the sugar and leave it to cool, then arrange the apricots from the compote with the uncut part facing up.
Pour the mixture over them and bake about 30 min. at 360°F (180 °C). Check if it's ready with a toothpick.
While still hot, invert the cake into another tray (be careful not to burn yourself) and syrup it with the rest of the compote.
