How to make
Wash and dry the chicken meat. Heat the oil in a suitable container and braise the meat evenly to a light crisp, then take it out. In the same oil, braise the coarsely chopped onions, garlic, mushrooms and finally the olives.
Season with salt, sugar, the spices and stir. Pour the mashed tomatoes in carefully, stir and add the chicken. Pour in 2/3 cup hot water, put the lid on and leave it to simmer for 30 min.
You have to wait for nearly all of the water to evaporate and to have it simmer in just oil. Serve a serving of Chicken Cacciatore with a garnish of boiled rice or pasta.
