How to make
Cut the 3 kinds of meat into thin strips about 3/4″ (2 cm) wide. Cut the garlic and mushrooms thinly, the carrots into thick strips, cut the zucchini into 3 parts and cut it into strips using a potato peeler, cut the peppers at an angle into coarse pieces, cut the onion into crescents.
Put the oil in a thick wok on a heated stove. First add the chicken meat to braise, stir and cook on high heat for a few min. Take out onto paper towels. Add the pork and braise it the same way, take it out and put the veal. The meat cooks very quickly; the important thing is to cut it into thin pieces of about the same size.
Pour out the oil from the frying of the meats and pour in the oil for the veggies, heat it, add the onions and garlic, stir, fry until softened and put in the carrots, zucchini, mushrooms and peppers. Stir nonstop, cook until all veggies soften, although it's best to leave the carrots and pepper slightly crunchy.
In a bowl mix the soy sauce, starch, sugar and vinegar, stir and add this mixture to the pan.
Stir, cook another 1-2 min. until the sauce thickens a bit, remove from the stove.
