"A very easy, quick and exceptionally tasty a la minute for lunch or dinner."

Ingredients

  • pork - 17.5 oz (500 g) neck / chops
  • potatoes - 17.5 oz (500 g)
  • red onions - 1/2 head
  • garlic - 2 cloves
  • olive oil - 2 tbsp
  • oregano - 1 tsp dry
  • thyme - 1 tsp dry
  • chili peppers - 1 green (peperoncino)
  • salt
  • black pepper
  • parsley - for sprinkling

How to make

Clean the potatoes and dice them finely. Julienne the meat.

Heat the oil in a large pan and braise the potato cubes for about 15 min., while stirring periodically. Add the chopped onions and cook until they take in the flavors, about 1-2 min.

Add the thinly julienned meat, the pressed garlic, thyme, oregano, black pepper, chili pepper and season with salt.

Stir and leave to cook until the meat is ready, about 10-15 min., for it to gain a nice fried crust.

Stir with a wooden spoon frequently along the bottom of the pan to unstick the crunchy pieces that get stuck during frying.

Serve with a slice of lemon and chopped parsley.

Notes: A very easy, quick and exceptionally tasty a la minute for lunch. The spiciness adds a nice little kick but it's optional. I didn't have a green chili pepper so I sprinkled a little peperoncino.
