How to make
Dissolve the yeast and sugar in the heated water and leave it to effervesce. Sift the flour and salt, make a well, pour the eggs, oil and warm yoghurt in it.
Start kneading, while gradually adding the yeast. Knead until you obtain a soft, nonstick dough. Put the dough in a bowl and leave it to rise for 30-40 min.
In the meantime, make the filling by crumbling the feta cheese and mixing it with the beaten egg. Divide up the risen dough into 8 equal parts.
Roll out each into a sheet and put a little of the filling on each. Wrap into a roll, then into a spiral (see photos).
Arrange in a deep baking container that you've smeared with 3 tbsp oil. Leave to rise again for 30-40 min. Then smear with the egg after beating it with the remaining 3 tbsp oil.
Bake the tutmanik in a preheated 390°F (200 °C) oven for the first 5-10 min. Then lower the heat to 360°F (180 °C) and bake until ready.
