Ingredients

  • dough
  • flour - 2 lb (1 kg)
  • yeast - 2 packets, dry
  • milk - 1 1/5 cups (300 ml)
  • water - 4/5 cup (200 ml)
  • salt - 1 tablespoon
  • sugar - 1 tablespoon
  • oil - 6 tablespoons
  • stuffing
  • butter - 2/5 cup (100 g)
  • feta cheese - 14 oz (400 g)
  • eggs - 2 (1 yolk for spreading)

How to make

Heat the milk slightly and dissolve the yeast in it, add the sugar and 4-5 tbsp flour. Stir everything and cover with a towel for 10 min. until the yeast activates.

Sift the flour in a bowl, make a well and pour the mixture with the yeast in it, along with the heated water, salt and oil. Knead a soft dough, smear it with a little oil and leave it for 30 min. in a warm area to double in volume.

In the meantime, crumble the feta cheese and mix with the eggs (set aside 1 yolk for smearing the tutmaniks).

Divide up the dough into 18 equal parts and roll out each one into an ellipse form. Smear with melted butter and put stuffing in each. Roll it up from the wide part to make a long wick, then wrap it into a spiral.

Leave to rise for 20 min.

Add a little milk to the beaten egg yolk. Smear the tutmaniks with this mixture and bake in a preheated 360°F (180 °C) oven for about 35 min. with the fan on.
