How to make
Heat a little of the milk and dissolve the yeast, 2-3 tbsp flour and the sugar in it, leave to bubble. Sift the flour, make a well in it and pour the effervescent mixture into it.
Add the egg and the white, butter, oil, salt. Start kneading, while gradually pouring in the rest of the milk. Knead until you get a smooth and stretchy dough, leave it to rise in an oiled bowl, covered with a towel, in a warm area.
After about 20 min. (it doesn't need to rise completely) divide the dough into 14-15 identical balls. Roll out each ball into a thin, rectangular sheet.
At one end of the sheet, make cuts halfway up the sheet. Put the filling in the uncut half, grated cheese in this case, and start rolling it up, with the cut strips positioned on the top.
Fold the resulting roll into a donut shape and put it in a muffin form nest. Do this for all of the balls of dough. Leave them for 15 min. to start swelling.
Beat the remaining yolk with 1 tbsp oil and smear the Mini Tutmaniks with it, sprinkle with seeds (optional) and bake in a preheated 430°F (220 °C) oven for 20-25 min. until reddened.
Once ready, leave them on a cooking grid to cool briefly, take them out of the muffin forms and cover with a towel to keep them soft.
As for the filling, you can use feta cheese, a mixture of feta cheese and cheese, finely chopped ham or whatever else you'd like.
