"Another really tasty pork dish. Easy to prepare, slow to cook and capable of feeding an entire family."

Ingredients

  • pork clod - 1.8 lb (800 g)
  • potatoes - 1.1 lb (500 g)
  • carrots - 5.5 oz (150 g)
  • onions - 5.5 oz (150 g)
  • peppers - 3.5 oz (100 g), red (roasted)
  • tomatoes - 5.5 oz (150 g) canned
  • tomato paste - 2 tbsp.
  • zucchini - 2 oz (50 g)
  • parsley - 2 bunches
  • oregano - 1/2 tsp
  • thyme - 1/2 tsp
  • black pepper - 1/2 tsp
  • paprika - 1 tsp
  • olive oil - 3 1/3 tbsp (50 ml)
  • vegetable broth - 4/5 cup (200 ml)

How to make

Clean and wash the veggies. Chop them coarsely and put them in a deep tray or clay pot.

Cut the meat into slices and add it to the veggies, pour in the canned tomatoes, tomato paste, spices to taste, olive oil and stir everything.

Pour in the broth, cover with a lid and put it in the oven at 360°F (180 °C) for about 2 hours. When serving, sprinkle each serving with fresh parsley.
