How to cook
Clean the carp well and wash it with cold water inside and out. Cut it into cutlets about 1/2″ (1.5 cm) thick.
Clean, peel and cut or press the garlic using a garlic press. Start arranging the carp cutlets in a deep bowl or tray. Sprinkle black pepper, salt and garlic over them.
If using a deep bowl, arrange another layer of cutlets and sprinkle on the spices. Pour on the wine, olive oil and juice of the lemon, let sit as is for about 1 hour.
Turn the grill on, grease it and let it heat up well, then put the carp cutlets on it to cook.
Cook each one 5 min. per side or until they get a golden crisp.
Serve with a salad of your choice and lemon slices.
