How to make
Mix the dry ingredients (flour, cinnamon, baking powder and ginger) in a deep bowl. Add the diced cold butter and knead well. Gradually add the sugar, honey and milk, then knead to obtain a soft dough that doesn't stick to your fingers.
Divide up the dough into 2 equal parts, put 1 in the fridge, while you roll out the other and make cookies from it. Roll the soft dough out into a sheet about 1/8 thick. Cut out cookies using cookie cutter shapes of your choice, arrange them in a pre-greased tray and bake about 6-8 min. in a preheated 390°F (200 °C) oven.
Repeat this process with the remaining dough. Leave the honey cookies to cool well.
Melt 2 oz (50 g) of chocolate in a water bath. You can use it to decorate the baked cookies. Mix the powdered sugar with the orange juice and also use for decoration, if desired. Leave the decorated cookies to dry and put them away in a tight-closing box.
The cookies are quite hard at first but after 1-2 days will soften and be ready for consumption.
