How to make
Oven - 320°F (160 °C);
Tray/baking form required.
Clean the potatoes and cut them into coarse cubes. Put them in a pot with cold water and 1 tsp salt. Boil for 15 min. after boiling point. Drain. Leave them aside.
Put the finely chopped thyme, rosemary, balsamic vinegar and a little olive oil in a bowl. Stir.
Put the tray with the butter to heat up in the oven. Take it out and pour the herbs and spices in the middle, sprinkle with chopped garlic and boiled potatoes but be sure to stack them on top of each other. Stir with 2 tablespoons, spread the mixture out and sprinkle with salt, black pepper.
Return to the oven and bake at 320°F (160 °C) for 30 min. After this, take it out, use the potato press to lightly mash each potato piece just to crack it (don't mash into puree) and return to the oven for another 20 min. at 320°F (160 °C).
