  • pork - 4.5 lb (2 kg), neck or breast
  • sauerkraut - 6.5 lb (3 kg)
  • oil - 1 1/5 cups (300 ml)
  • peppers - 2 - 3, dry
  • bay leaf - 2
  • black pepper - 20 grains
  • paprika - 2 tbsp

How to make

Chop the pork and sauerkraut coarsely. Pour 2/5 cup (100 ml) oil at the bottom of a clay pot.

Arrange 1 layer of sauerkraut on top. Sprinkle with crumbled dried peppers. Add a few grains of black pepper, some paprika and pieces of crumbled bay leaf. Arrange a layer of meat on top. Continue arranging in this order until out of ingredients. The final layer needs to be sauerkraut.

Fill the pot with hot water up to the final layer. Close it. Put the clay pot in a cold oven. Saute for at least 3 hours at 290°F (145 °C). Remove the lid and bake another 30 min.
