Ingredients

  • tomatoes - 9 lb (4 kg) ripe, healthy, not large + 4.5 lb (2 kg) for the sauce
  • salt
  • sugar - optional, 1 - 2 pinches per jar

How to make

Pick out fully ripe and healthy tomatoes. Blanch them for about 30-40 sec. in boiling water. Immediately pour cold water over them and peel off the outer skin, which will be easy to do at that point.

Mash the 4.5 lb (2 kg) tomatoes into juice, season with salt and a little sugar to taste. Bring to a boil and leave it to cool to 180°F (80 °C).

Arrange the peeled tomatoes into jars and top off with the juice, which can be diluted if necessary if there's not enough for all the jars.

Close the jars and sterilize them for 20 min.
