  • water - 1 cup (250 g)
  • oil - 2/5 cup (100 g)
  • salt - 1 pinch
  • flour - 1 cup (250 g)

  • sugar - 1 cup, or to taste
  • eggs - 4 yolks

How to make

Put the water, oil and pinch of salt to boil. Pour in the flour all at once and stir until the mixture starts to unstick from the container, about 5 min.

Let the mixture cool a bit and add the eggs 1 by 1, while stirring well until each is absorbed. Oil a large oven dish, pour spoonfuls of the dough in it, carefully shaping them with your hand and spoon.

Bake in a high oven to a pink color. Once they're ready, turn the oven off and leave them in it for half an hour without opening the door.

For the cream mixture, boil the milk, stir with the sugar. Separately, while waiting for the milk to boil, beat the yolks with the flour. Pour in small amounts of hot milk to it at a time while beating nonstop.

Then put the whole cream on the stove and stir until it thickens. Stir the prepared cream with the butter. Let it cool.

Make slight cuts along the sides of the eclairs and fill them with the cream. The resulting eclairs are absolutely delicious.
