Ingredients

  • water - 2/3 cup (150 ml)
  • yeast - 2/3 cube
  • salt - 1 tbsp
  • sugar - 1 pinch
  • flour - about 1 2/3 cups (400 g)
  • feta cheese - 5.5 oz (150 g)
  • oil
  • eggs - yolks, for smearing

How to make

Dissolve the yeast and sugar in cool water, then add a little flour with the salt and start kneading. Add flour until you get a very soft dough.

Leave the dough to rise for 1/2 an hour, then divide it into 2 parts, roll out each one into a sheet the size of the round oven dish in which you'll be baking the loaf.

Smear the oven dish generously with oil, put 1 sheet in it and crumble all of the feta cheese on top. Pour a little oil in a thin trickle over the feta, cover with the other sheet. After you've placed the sheets, press lightly on top with your hands, so the feta cheese doesn't stick out.

Make cuts carefully with a knife but without slicing all the way through to the middle of the oven dish. Twist each piece left or right.

Smear the prepared loaf with egg yolk and bake in a moderate oven for about 30-40 min. After it's baked, take it out and cover with a towel.
