How to make
Pour the yeast in a bowl, add the sugar and pour on the milk.
Stir well and wait for the yeast to activate. Then add 1 whole egg + the egg white of the other, the yoghurt, oil and salt. Stir again. Next add the flour - gradually, a little at a time.
Knead a soft, nonstick dough. Cover with a towel and leave to rise for 40 min. Then divide the risen dough into 4 equal-sized balls, roll out each into a thin, round sheet.
Place 1 sheet in a medium-sized round tray, smear it lightly with oil, sprinkle with grated feta cheese and place a 2nd sheet on top. Repeat this process with the rest of the sheets but don't smear the last one with oil and don't sprinkle with feta.
Place a glass in the middle of the dough and cut out 9 identical parts, twist each one twice. Smear with beaten egg yolk mixed with 2-3 tbsp milk.
Sprinkle generously with sesame seeds. Cover with a towel and leave to rise again for 40 min. Bake in a preheated 360°F (180 °C) oven.
