How to make
Put the onion, garlic, zucchini and pepper in a large pot or deep pan with a few tbsp olive oil. Fry on high heat until the veggies gain a golden-brown color.
While frying, sprinkle with the dried basil or finely chopped fresh basil. Once the veggies have browned slightly, take it off the heat, add the cheddar slices and cover with a lid.
In a separate pan without a lid, put the tomatoes and a little olive oil and cook on moderate heat about 5 min., while stirring periodically.
Cook until the the juice from the tomatoes evaporates. After 5 min., add the tomatoes to the other veggies and stir slightly. Sprinkle with salt and pepper to taste.
