How to make
Put the elderberry flowers in a pot and pour the water over them. Close the pot and leave them to sit for 24 hours.
Strain them very well, while also straining the flowers themselves with your hand at the end.
Transfer the liquid into another container for boiling and add the sugar and citric acid.
Put it on the stove on low heat for the sugar to melt but be careful not to let the mixture come to a boil.
Take it off the stove before it comes to a boil, distribute the syrup into jars with a twist-on cap. Turn them upside down and leave them to cool.
Store in a cold, cool area.
