How to make
Wash the potatoes. Even them out on one side with a knife, so the potato can sit upright. On the other side, cut off a large part. Salt each potato and wrap it well in foil.
Bake the potatoes in a preheated 390°F (200 °C) oven for 40 min. You can boil them as well but the taste won't be the same.
Grate the onions and garlic. Dice the rest of the vegetables. Pour a little oil in a deep pan and add all of the vegetables. Fry for 5 min. on high heat, lower the stove and fry another 15 min.
Season with thyme, salt and stir.
Carve out the baked potatoes' insides and put some of them in with the vegetables. Stir and stuff the potatoes with this mixture.
Sprinkle each potato with 1 tsp parmesan and cook for 10 min. on the grill setting.
