How to make
For the recipe stuffed chicken with vegetables flavor the chicken inside and out with salt and black pepper.
Cut a large roasted pepper into small pieces.
Heat olive oil in a pan and fry the pepper along with the crushed garlic cloves for 2-3 minutes - enough to flavor them. Remove the pan from the heat.
Add the chopped green olives, the egg mixed with the grated Parmesan cheese and the breadcrumbs and drizzle with the juice of half a lemon. Homogenize the filling well.
Stuff the chicken. Sew the hole with floss or stick it carefully with toothpicks.
In a deep pot pour a cup of olive oil. Add a sprig of rosemary and a clove of garlic. Fry the chicken on all sides.
Pour it with a glass of white wine, a glass of warm water and the juice of half a lemon. Cover the pot and stew it for 10 minutes.
Preheat the oven to 390°F (200°C). Transfer the chicken into a baking pan lined with parchment paper.
Drizzle with the liquid from the stewing. Put the baking pan in the oven and bake the chicken, until it is nicely browned.
Serve the stuffed chicken with salad of your choice!
