How to make
Wash the potatoes and without peeling them, put them whole to boil a bit. Cut the semi-boiled potatoes down the middle and open them carefully without mashing them – so that they can be stuffed. While still warm, coat the insides with a little butter.
Fry the chopped onions in preheated oil, add the minced meat, finely chopped tomatoes and tomato paste. Once it comes to a boil, add the red beans, season with spices and boil until some of the liquid evaporates. With thus prepared stuffing, fill the potatoes. Wrap each potato in greased foil, arrange them in a tray and bake for about 20-25 minutes at 390°F (200 °C).
Serve the stuffed potatoes without the foil, with sliced peppers and grated parsley.
