Separate the egg yolks in a tall and relatively narrow bowl. Using a mixer, beat them with the mustard, salt and sugar.
Pour the oil slowly in a thin trickle, while stirring, so that the mixture doesn't curdle.
Add the juice from the lemon and stir once again.
