How to make
Put the chicken legs in a pressure cooker with a little salt and 1 tsp of sugar. I used chicken legs because the meat is juicier but you can use fillets too. I added the sugar to make the water boil faster. Boil the meat in the pressure cooker for 15 min.
Take them out, let the legs cool and debone them. Drain the broth into another pot.
In the meantime, cut the carrot, onion and cabbage.
Put the olive oil in a deep pan and heat it up. Add in the vegetables and braise 5-6 min. until softened. Stir and add the smoked paprika and cayenne pepper. If you don't like spicy food, don't add it. Braise everything for another minute. Remove from the stove.
Put the pot with the broth on the stove, bring to a boil, add the braised veggies and chopped red pepper, stir and put in the deboned meat. Season with salt, black pepper and savory, stir and boil 10 min. Finally, add the parsley and citric acid, stir and remove from the pot.
Upon serving, sprinkle with cayenne pepper flakes.
