Ingredients

  • pork fillet - 2 lb (1 kg)
  • green beans - 2 cups (500 g)
  • carrots - 2
  • bacon - 3.5 oz (100 g), smoked
  • garlic - 2 cloves
  • olive oil
  • salt
  • black pepper

How to make

Cut the meat into thick fillets. Smear them with olive oil, season with black pepper, salt and leave it aside while you prepare the garnish.

Clean the green beans and cut them in 2 lengthwise. Put them to boil in salted water. To the boiled green beans, add the very thinly sliced carrots. Boil a little more until the carrots soften.

Take the vegetables out with a slotted spoon onto paper towels and dry them. Make 4 bundles and wrap them with bacon in the middle. Stick a toothpick through each bacon strip to keep the bundles together.

Heat a grill pan with several drops of olive oil. Chop the garlic and put it in the pan. Once it releases its aroma, take it out.

Pour on a little more olive oil and put the bundles to crisp on both sides. Place them in plates and remove the toothpicks. In the same pan, crisp the fillets on both sides. Serve with your favorite sauce.
