How to make
Beat the eggs with the sugar and add the grated carrots. Stir and add the flour, baking powder and walnuts.
Stir once again to get a homogeneous mixture. Pour it into an oven dish laid out with baking paper and distribute the mixture evenly with a spoon.
Bake in a preheated 360°F (180 °C) oven for about 12 min.
Take it out and invert onto a moist towel. Wait 5 min. and then remove the baking paper.
Beat the mascarpone with the powdered sugar, smear it and wrap into a roll.
