How to make
Clean the pears of their seeds and peel them. Cut them into thin crescents. Cut the meat into coarse pieces.
Pour the olive oil in a tray, arrange the meat, sprinkle with salt, black pepper and thyme. Sprinkle with the very finely chopped chili pepper - just a little bit to balance the flavors.
Arrange the pears on top of the meat, pour in the cider, squeeze out the juice of 1/2 a lemon and pour on honey.
Cover with aluminum foil and bake in a preheated 360°F (180 °C) oven for 1 hour, then remove the foil and bake to a golden brown color of the pears and meat.
