How to make
Beat the eggs and the sugar. To them add the melted butter, baking powder, vanilla and citrus zests. Add the sifted flour in a thin trickle, while stirring nonstop the entire time.
Add the walnuts as well but set aside a few of them. Divide the resulting mixture in 2, leave them aside. In a deep container, pour in the apricots, raisins and prunes. Pour in the rum and leave them to swell.
In one of the cake mixtures, put the drained raisins. In the other - put the chopped dates. Cover the bottom and sides of a deep oven dish with baking paper. Put in the first mixture with the raisins, then the one with the dates.
Arrange the drained prunes along the edges of the oven dish, pressing them in toward the bottom. Arrange the apricots on top and sprinkle with walnuts. Bake the cake in a preheated 360°F (180 °C) oven until ready. Once it cools, remove it from the oven dish carefully. Sprinkle with powdered sugar.
