"A traditional Bulgarian clay pot dish, chock full of flavors and a special wine sauce."

Ingredients

  • pork - 26.5 oz (750 g) meat from the leg, boneless
  • red wine - 2/3 cup (150 ml)
  • champignons - 9 oz (250 g)
  • shallots - 3.5 oz (100 g)
  • parsley - 1/2 bunch
  • fish broth - 1
  • flour - 1 tbsp
  • olive oil - 4 tbsp
  • paprika - 1 tsp
  • salt - to taste
  • black pepper - to taste
  • bay leaf - 4

How to make

Chop the washed and cleaned pork, then salt it and braise in a pan with half the olive oil. Once reddened, pour in the wine and saute another 5 min.

Then transfer to a clay pot with a lid. In the same pan, braise the chopped shallots and mushrooms with the remaining oil. Sprinkle them with the spices and add the flour.

Also add in the crumbled broth and boil a little water. Leave the mixture to simmer a bit, then pour it over the pork.

Pour in more water to cover all of the ingredients. Place the bay leaves and put the lid on the clay pot. Place the dish in a heated oven for about 60 min.

Lovely photo and looks very warming. Will it still taste as good if the fish stock is replaced with chicken stock instead?

Also, what would this traditionally be eaten with? Bread of some sort?
