How to make
Cut the tops off the tomatoes and scoop their insides out with a spoon, while removing the seeds.
Flip them upside down onto paper towels to drain of any excess juices. Mix the tuna with the rice, finely chopped onions and lemon zest, add the mayo and oil and stir well.
Fill the tomatoes with the resulting mixture, cover with their tops and cook in the microwave for about 2 min. on max heat.
Serve the stuffed tomatoes on a bed of lettuce.
