"Got an extra jar of apricot compote lying around? Yes? Then why not enjoy this aromatic and easy-to-make pie?"

Ingredients

  • compote - 1 of apricots or 1 lb of fresh apricots (can use prunes)
  • margarine - 2/5 cup (100 g)
  • sugar - 1 1/2 cups
  • eggs - 4
  • yoghurt - 1 cup
  • flour - 2 cups
  • walnuts - 10
  • dried fruits - 1 handful finely chopped
  • vanilla - 2 powder packets
  • baking powder - 1 (or ½ teaspoon citric acid and 1 tsp baking soda)

How to make

Heat the oven. Drain the apricots from the compote using a colander. An oven dish is smeared with a little oil and sprinkled with flour.

In a separate dish, mix and sequentially add: sugar and margarine, the 4 eggs one by one, yoghurt, flour, vanilla, crushed walnuts, dried fruits and baking powder. Add the mixture into the oven dish.

Dip the apricots (if fresh - split in halves), in a little flour in a bowl, and arrange evenly over the dough with their soft part facing up.

Put the pie in a preheated oven and once it becomes light-gold, change the oven setting to 430°F (220 °C).

After 40 minutes, it is ready. Serve cold (if it is not gobbled up by someone in the meantime).
