How to make
Clean and wash the chicken, cut it into portions. Fry the chicken in heated oil until browned and take it out.
Place the chopped onion, carrot, celery and garlic in the same oil. Fry until the onions turn soft and sprinkle with flour first, then with paprika. Mix well, add a little water and let it stew.
Add salt and after ten minutes, strain through a sieve. Return the chicken to the resulting strained sauce and add the wine, boil 5-6 minutes.
Thicken with beaten egg yolks, yoghurt and lemon juice.
