How to make
Cut up the lamb meat. Pour the oil in a pot and braise the lamb. Remove it and braise the carrots for 5 min. Put the meat back in, pour in the water and season with salt and black pepper.
Bring to a boil, lower the heat, put a lid on and saute for 1 hour. Add the chopped potatoes and thyme, put the lid back on and saute 1 more hour.
Drain away the liquid and boil it separately, add the butter and parsley to it, season with salt and black pepper and put it back in with the meat. Serve with a garnish of your choice.
