"Salmon with an exotic taste and aroma - a delicacy that everyone has to try at least once in their life."

Ingredients

  • salmon - 23.5 oz (670 g), fillet
  • sea salt - 4 tsp
  • sugar - 4 tsp
  • ginger - 1" root
  • lemongrass - 2 bunches
  • limes - rind of 1
  • chili peppers - 1
  • black pepper
  • coriander - 2 tbsp
  • for the dressing
  • mayonnaise - 2/3 cup (150 ml)
  • limes - juice of 1
  • coriander - 2 tsp

How to make

Mix together the sea salt, sugar, lemongrass, ginger, lime rind, chili pepper, black pepper and coriander.

Put a part of the mixture into a small tray, place 1 fillet on top, pour on a part of the spice mixture on top, place another fillet on top and finish off with spices.

Cover with foil, place a cutting board on top and press with cans or some type of weight.

Put in a fridge and take the fish out after a few days have passed. Make the dressing by mixing the products for it. Cut the salmon into very thin slices and serve with the dressing.
