Ingredients

  • tortillas - 12
  • veal - 21 oz (600 g), loins
  • corn - 1/2 cup (120 g), canned
  • red beans - 2/5 cup (100 g), canned
  • lemons - 2 tbsp, juice
  • oil - 3 tbsp
  • peppers - 2, a red and green
  • tomatoes - 1
  • oregano - 1/2 tsp
  • cumin - 1 pinch
  • coriander - 1/2 tsp
  • for the marinade
  • soya sauce - 1 - 2 tbsp
  • oregano - 1 - 2 pinches
  • cumin - 1 - 2 pinches
  • coriander - 1 - 2 pinches
  • oil - for smearing

How to make

Cut the veal loins into steaks about 1/4″ (0.5 cm) thick. Rub them with spices, pour soya sauce on and leave for at least 2-3 hours to marinade.

Wash the vegetables well and cut them finely. Transfer them to a deep bowl, add the corn and red beans, season and stir well. Grill the marinated meat 2-3 min. per side.

Toast the tortillas (you can use pancakes) briefly on the grill, put a little of the veal in the middle and pour on the vegetable mixture.

Wrap the fajitas and serve warm.
