How to make
Wash and dry the duck, then rub it with salt and freshly ground black pepper.
Smear it on the inside with butter and put it in an oven dish over a cooking grid. Put it to bake and smear it with a mixture of milk and butter from time to time using a brush.
Once the duck is roasted, let it cool and cut it. Pour the white wine with a little water in the tray with the sauce, deglaze and boil for a few minutes.
You can serve the roast duck with potato salad or cucumber salad.
