Ingredients

  • couscous - 7 oz (200 g)
  • hot water - 13.5 fl oz (400 ml)
  • olive oil - 1 2/3 tbsp (25 ml)
  • salt - 1 level tsp.
  • Green Spices
  • parsley leaves - 0.9 oz (25 g)
  • mint leaves - 0.5 oz (15 g)
  • coriander leaves - 0.2 oz (5 g)
  • chives - 0.35 oz (10 g) sprigs

  • lemons - 1 medium (the juice)
  • garlic - 2 cloves
  • red pepper - 3.5 oz (100 g)
  • green pepper - 3.5 oz (100 g)
  • black olives - 3.5 oz (100 g) pitted
  • olive oil - 3 1/3 tbsp (50 ml)
  • spring onions - 7 oz (200 g)
  • cumin - 1/2 level tsp.
  • black pepper - 1/2 level tsp.
  • salt - 1 tsp. or to taste

How to make

Pour boiling water over the couscous and let it sit until it absorbs it. Then mix well with the salt and olive oil so that it does not become lump. Let it cool down well.

Chop all the green spices, drizzle them with lemon juice and set them aside.

In a bowl, mix the diced peppers and olives. Chop the spring onion and also put it in the bowl. Add the juice of one lemon, 50 ml. olive oil, salt, black pepper and cumin. Mix.

Pour this vinaigrette over the couscous, add the green spices.

Mix and refrigerate for 30 minutes.

Serve this Tabbouleh salad well chilled. Delicious and aromatic!
