Preparing the cream
The eggs, sugar and flour are beaten with half of the milk. Then the vanilla and the remaining milk are added. Put it on the stove, add the butter and stir until it thickens. When it is removed from the stove, the cream is covered tightly with cling film and left to cool. You can put it in a container with cold water.
Preparing the cake layers
1. In a pot, add the eggs, sugar, honey, baking soda and cocoa. Beat with a whisk. Finally, add the butter.
2. Place the pot in another pot, which you have previously put on the stove with water to boil. Boil the mixture in a water bath for about 5 minutes, it should increase in volume.
3. When it is ready, remove the mixture from the stove. Immediately add half of the flour. Stir with a wooden spatula. The dough becomes very sticky. Add the remaining flour and knead the dough. Add a little more flour while kneading.
3. Divide the dough into 8. For this purpose, I first measure the entire dough and then divide it into 8. Each one weighs about 2.8 oz (80 g).
4. Prepare two trays and line them with baking paper. Use the same paper for all the cake layers. There is no need to put a new one on each time. The size of the tray does not matter at all. It should fit inside. I choose a larger tray because it is easier for me to place it.
5. Next, roll out the pieces of dough. Take a ball. Flour both sides and roll it out. Turn the cake layer over from time to time and add flour. When the circle gets bigger, I roll out from the middle to the edge. To make the cake layers the right size, I use a rolling pin. I roll out with a diameter of 80°F (28 cm).
6. I bake two trays at a time on two levels. While the cake layers are baking, I roll out two more. I bake in a preheated oven at 360°F (180°C) for 8-10 minutes. The cake layers are left to cool completely. While they are warm, they are not placed on top of each other. After they cool down, they become very hard.
Next step is layering the honey cake. Cake layer, cream, cake layer, cream and so on until you run out of products. On the last cake layer, put a little dairy cream. You will notice that the cake moves, this is normal. Wrap the cake with household foil and leave it somewhere cool for 30 minutes. Then spread it on top and sides with the remaining cream. Finally, sprinkle with walnuts.
The festive homemade honey cake is placed in the refrigerator for a few hours.
