How to make
Start with cleaning the fish, which you can set aside when it is ready.
Peel the garlic cloves and cut them into slices, as well as the tomato. Cut the lemon into two halves.
Continue with the seasoning of the fish and for this purpose sprinkle some salt on a board or plate, as well as the spice mix. Also squeeze the lemon and if there are any seeds, remove them.
Dry the already washed fish well and place it on the spices. Roll it well on both sides.
Start stuffing the fish, by first placing the garlic slices, 3-4 tomato slices, 2-3 rosemary sprigs and a little more garlic on top. Spread the remaining spices on the inside of the fish.
Add a little olive oil in the fish and sprinkle a little more of the spices inside it, as well as on its skin.
Place the fish in a greased baking tray and it is ready for the oven.
Cover the tray with aluminum foil and roast the sea bass in a preheated oven at 390°F (200°C).
After about 30 minutes, remove the foil and return the tray back into the oven, in order for it to obtain a nice brown crust. After another 15-20 minutes, the fish is ready.
