How to make
Clean and finely chop the onion, carrot and celery. Place them in a pan with heated oil and fry briefly. Add the washed rice to the pan with the vegetables.
Fry until it becomes transparent. Add the paprika, tomatoes and pour a glass of water.
Reduce the heat and let the rice cook until it absorbs the water. Finally, add the minced meat, chopped garlic, finely chopped parsley and salt to taste.
Clean the peppers from stems and seeds. Prick them in several places with a skewer or fork, salt the inside and fill with the prepared stuffing.
Dip the opening of all minced meat peppers in flour, then arrange them in a heated and oiled casserole. Pour 1 1/2 cups of warm water. The stuffed peppers are baked in a preheated oven at 180°C for about 50 minutes.
After baking, transfer them to another container and strain the water in which the peppers were baked.
Beat two eggs in a bowl, add the yogurt, flour and the strained sauce from the baking. Mix the topping and put it on the stove to thicken, stirring periodically.
Serve the stuffed peppers with the prepared sauce.
